Inventory/Recipe Number
Field that displays the Inventory Number or Recipe Number
Name
Field that displays the Inventory Name or Recipe Name
Inventory/Portion Unit
Field that displays the Inventory Unit of the Inventory Item or Portion Unit of the Recipe.
Average Weekly Consumption
The Average Weekly Consumption is the highest amount of the item normally used during a typical week. It is counted in inventory unit for inventory items and in portion units for recipes. The AWC may be from .1 to 999.9 and must contain a decimal point.
Note: The average weekly consumption should be checked for accuracy when the inventory unit or portion unit of the ACI item has been modified. Warning reports are generated in the inventory and global recipe maintenance programs when the units are modified.
Production Department
The Production Department determines which storeroom requisition the ACI items will be printed. The items will print on a separate ACI Storeroom Requisition by entering Department 30, ACI. The production department for a recipe will determine which department the recipe will be produced in.
Issue Frequency
The Issue Frequency determines how often the inventory item will appear on the storeroom requisition. An issue frequency of "0" will disable the printing of the item on a storeroom requisition. Its needs will be calculated based on a meal issue. For example, bread may be an item with an issue frequency of "0". It will not appear on a storeroom requisition. The inventory needs for bread will be calculated by the meal. The inventory needs determine how much of an inventory item to purchase.
- Selecting 1, by week, will cause the total requirements for the ACI item to print once weekly on the storeroom requisition on the first meal of the first day of the production week.
- Selecting 2, by day, will have the ACI item printed only at the first open meal on the day it is required.
- Selecting 3, by meal, will cause the ACI item to be printed on the requisitions at every meal where it is required.
Enter the issue frequency: 0, 1, 2, 3 for how often the ACI item should appear on the storeroom requisitions of the production department.
Note: The issue frequency for ACI is used only when the inventory need is for ACI, otherwise the issue frequency in the location inventory file is used. For example, bread on ACI has an issue frequency of week (1), the bread required for the production week will appear on a storeroom requisition on the first day of the production week. The purchase requirements will order the necessary bread to be delivered in time for issue on that day. In the location inventory file bread has an issue frequency of meal (3), any inventory needs generated other than ACI will use the issue frequency of 3.
Menu Category
Men Categories enable like items to be grouped together for the purpose of reviewing them in an ACI Precost report or within the Service Needs Maintenance program.
Selling Price
The average selling price is the revenue derived from the sales of one inventory unit of the ACI item. For example, the selling price of coffee which is inventoried by the LB would be the average total revenue from the sale of all the coffee that one pound would make.
Per Patron Consumption
This field is result of multiplying the AWC * Total Patron Counts for the season (Use Switches are accounted for as well). This calculation will be affected by the PPC display unit (see Recipe/Portion Unit). Ratio differences between Recipe Unit and Inventory Unit for Inventory Items will be displayed appropriately.
Recipe/Portion Unit
This field will either display Inventory Units or Recipe Units for Inventory Items (as selected from the Edit Menu -> PPC Display). Recipes will always be displayed in Portion Units.
Per Patron Consumption (PPC) Cost
The Per Patron Cost is calculated in terms Inventory Units (Portion Units).
Past Period Usage
The Past Period Usage is the average Inventory Usage for the defined Past Period Usage date range (Set Past Period Usage).
