The Yield Pointer indicates which edible portion percentage (yield factor) to use as defined in Global Inventory.
The default Yield Pointer is always 1, and the default Yield Factor is also equal to 1 (indicating no loss due to processing). Any additional Yield Factors that are available to select from reflect the possibilities of loss in yield due to processing, for example, for fresh fruits, vegetables and canned goods.
Example:
The inventory item for 'Fruit Cocktail, Canned" has .85 defined for Yield Factor 2. A recipe calls for 6 pounds of fruit cocktail with a Yield Pointer of 2 (which points to Yield Factor 2). The system will calculate that for 6 pounds of fruit cocktail you will have to purchase 7.059 pounds of product. The system will then determine how many inventory units are required in #10 cans, based on the number of portion units per inventory units in the inventory file.
The Yield Pointer for meats should be 1. This is due to the fact that shrinkage or loss on meats can vary greatly among recipes and must therefore be calculated into the amount required for an individual recipe.
The Yield Pointer for a subassembly is always 1.
