Yield Factor 2

Yield Factor 2 (YF2) is used to indicate the difference between the as purchased and edible portions of an item.
 
This applies mainly to canned goods that are drained prior to production or fresh fruits and vegetables that are processed and cleaned. The YF2 is the percentage of usable product and is expressed as a decimal. In the Global Recipe program, the user selects which yield factor to use for an item.
 
For example, the YF2 of a raw onion after it has been peeled and processed is .9 or 90%.  The 10% loss is representative of removing the peel, ends, sprouts, or any other non-edible portion of the onion.
 
The purpose of defining this field is that when used in a Global Recipe, it will help the user purchase the proper amount based on the fact that there will be loss due to processing.
 
Note:
YF1 is always 1.00, which indicates no difference between as purchased and edible portion. It does not appear in this program but is defined as the default.
 
YF2 can vary with product as described above.
 
Special Note Regarding Meats:
All meats should have YF2 set to 1.00. Meats do not use a yield factor due to processing losses that vary dramatically depending upon the cut of the meat and the cooking method. Yields for losses in meats are accounted for using the quantity of product in the Global Recipe program.
