The Vary Flag indicates whether the ingredient will vary proportionately if the portion size is modified on a menu. Enter 1 if the ingredient should vary and 0 if the ingredient should not vary.
If the inventory amount is not to vary, the amount called for in a recipe will remain the same per portion unit, regardless of the portion size. For example, if the recipe for BBQ beef on bun is written for a 3 oz portion size, the portion size could be increased to 6 oz by coding it as such on a menu. A Vary Flag of "0", do not vary, on the bun will call for 1 bun regardless of the amount of filling per sandwich.
If the vary flag for the bun is set to "1" Vary, and the portion size is modified from 3 to 6 ounces on a menu, 2 buns would be required.
The Vary Flag for a subassembly is always 1.
