What is the difference between global and location recipes?

Global recipes form the main recipe database. Location recipes are a subset of the Global Recipe file and can be assigned unique features particular to the individual location, such as producing departments, yield units and rounds.

Does it matter what the recipe number is?

No. However, each account may want to be selective about numbering so that all beef items begin with the same number, all soups in a similar numbering category and so on. It makes numeric sorts more meaningful, and in the Nutritive Analysis programs, you can search for nutrients by range of nutrient numbers. A sample recipe numbering guide is available in the setup manual.

How do I find out which number is available?

At TCL, type SORT GREC NAME, then look for breaks in the numbering sequence. Alternatively, use the View Available Numbers program located under Global Folders\Recipes.

Who should have access to this program?

Very few people. Changing ingredients or other parameters has a profound effect on other FoodPro programs, including purchasing, forecasting and production reports. Limit access to those who are responsible for data integrity, or give the privilege to look but don't touch. Recipe ingredients can be viewed in the location recipe file by modifying line number 12.

How should the items be named?

Do not waste valuable space with commas or other delimiters, but start with a common name such as Chx Baked Breast, Chx Fried, Chx Fingers. Since you are permitted 30 characters, use common sense and be consistent. Try to avoid names like FUDGE FROSTED DECORATED CAKE, since the menus may truncate the name when entering a menu or viewing service needs and you won't even see that it is a cake!

Once I enter a recipe, what else do I have to do to use it?

Add it to the location file, then add the recipe to a menu. Even if you are not serving the menu, the item will appear on the menu item cost summary for review of cost, acceptability factor, portion size and profit expectations.

How do I add a new recipe?

Open the recipe program, then enter the new recipe number. Use the tab key to navigate through each remaining field. Then click save. Think of the recipe as a document. If you don't save your work, you lose it.

How do I delete a recipe if no longer used?

Deleting recipes is always an interesting proposition. If you try to delete from Global, it will tell you which locations are using it. If you go to the locations to delete it there, it will tell you if the recipe is currently on a menu or on a prepared product transfer, and won't let you delete it until the transfer processes or you take the recipe off the menu. This is not intended to make you crazy, it is just to avoid leaving gaping holes in the database.

What is the Print As name used for?

Print As names are for customer viewing of the recipe on the menu wizards, Nutrition Facts Label, or the Menu and Nutritive Analysis on the Web program. Although the database name is Chx Baked Breast, the Print As name can be defined as Seasoned Baked Breast of Chicken or something equally as creative.

How do I print the recipe?

  1. Print the Global Recipe from the print icon in this program. All info will print including Picture, Nutrition Facts Label, Method of Prep, and other details. This will print to the Windows defined printer.

  2. You can also print all the Global Recipes at once from Global Folders>Setup>Setup Step 3>Batch Recipes to Source Number of Portions.

  3. To print location versions of the recipe (with inventory AP amounts and EP amounts listed), go to Global or Location Reports>List Data Files>List Recipes (Global).

List Data Files> List Recipes (Location) is not a working recipe, but more of a check sheet summarizing all the fields as column headers and the recipes as rows in either alphabetical or numeric order.

What do the cooks see in terms of recipes?

Recipes are printed differently in the location and will break ingredient amounts into familiar units. Inventory amounts required are on the recipe. These are working copies, batched to forecasted portions for one time use only.

How can I tell when a Global Recipe was last changed?

The Global Recipe program displays the last time a recipe was saved (and who saved it) in the lower right corner of the program window:
